Vegetable Lasagna .Ingredients
1 8 oz pkg whole wheat lasagna noodles. 2 cups broccoli finely chopped 1 16 oz Ricotta cheese 2 cups shredded mozzarella cheese 1 8 oz sliced fresh mushrooms 2 tsp basil 1 ½ oregano 3 ½ cups spaghetti sauce Method Boil lasagna noodles until al dente. Steam broccoli and mushrooms. Combine the cheeses, (set aside 1 cup mozzarella), vegetables and herbs. In a 13x9x2” glass dish, start layers with 3 noodles, ½ cup cheese mix, and almost a ½ cup sauce. Continue the layering process ending with a noodle layer on top. Top, using the leftover sauce, and top with the 1 cup set aside mozzarella cheese. Bake at 350 degrees covered for 20 minutes, and then 20 minutes uncovered. |
