Red Beans with SalsaIngredients
½ cup dried red beans ½ cup dried kidney beans 3 cups water 1 ½ cup onions chopped 3 garlic cloves halved 1 tsp oregano 1 bay leaf 2 tbsp chili powder 1 tsp cumin 1 tsp coriander 1 tsp crushed red pepper flakes 1 cup tomato juice 1 cup brown rice 2 cups chicken stock Method;
Soak beans overnight. Transfer to a lg pot with water, onions, garlic, oregano and bay lf. Bring to boil, then simmer uncovered for 1 hour. Add chili powder, cumin, coriander, red pepper flakes and tomato juice.. Continue to cook. Prepare brown rice in chicken stock until tender. Stir into beans. Serve with salsa and cheese. |
