Pumpkin Pancakes
Ingredients
1 c canned pumpkin 2-2½ c water 3 eggs 1 c raw sugar 1 tsp cinnamon Splash vanilla Pinch unrefined sea salt 2½ c whole wheat pastry (finely ground) flour 4 tsp baking powder (aluminum free) 2 tsp pumpkin spice Method Blend ingredients together until frothy. Add olive oil or butter to a hot pan. Pour some batter into the center. Cook until top is glazed, and bottom is browned. (Do not flip until top is firm, or pancake will be a mess.) Flip pancake and cook the other side. Serve with real maple syrup. |
