Black Bean Veggie Soup
Ingredients
3 tsp olive oil 1 onion lg chopped 1 gr pepper chopped 3 cloves garlic chopped 3 carrots chopped 4 tsp chili powder 1 tsp gr cumin 4 c chicken stock 3 (15 oz) cans black beans 3-4 c corn ¼ tsp black pepper Unrefined sea salt to taste 3 (14.5 oz) cans stewed tomatoes 6 c water Method
Cook onions, garlic, green pepper and carrots in oil. Add chili powder, cumin and stock. Add I can beans, corn and pepper. Bring to a boil. Puree tomatoes and remaining beans, and add to pot. Simmer till done. Add salt to taste. |
