Red Beans and Rice
1 lb red beans
1 c onions chopped
1 c celery chopped
1 c red pepper chopped
3-4 cloves garlic finely chopped
1 tsp unrefined sea salt
1 med can organic tomatoes
Soak bens overnight. Rinse. Place in a large stock pot and cover with water. Bring to a boil.
Add remaining ingredients. Reduce heat to simmer 2 hours. (Or in a crock pot all day) Stir occasionally.
Prepare 1 c brown rice.
Add ½ c of the cooked rice to mixture. Simmer over low heat for 30 minutes without lifting lid.
Set off stovetop for 15 minutes. Fluff .
Serve over the balance of cooked rice.
