Lebanese Chick Pea Salad
1 pkg dried Garbanzo/chick peas
1 c millet
Mix ingredients and soak over night.
Cook in slow cooker over next day.
Drain, and refrigerate overnight.
In a food processor; Pulse
1 bunch fresh spearmint
1 bunch green onions
10-12 grape tomatoes
1 bunch fresh parsley
Add ingredients to pulsed mint, and pulse until desired consistency is achieved.
¾ c olive oil
2-3 lemons juiced
1-3 tsp unrefined sea salt
Blend or whisk ingredients together until creamy.
Finally, stir all ingredients together well and serve.
