Cheesy Corn Casserole
Ingredients serves 6
1 ½ ground beef
1 17 oz can corn drained
2 eggs slightly beaten
1 cup sm curd cottage cheese
1 tbsp whole wheat flour
1 8 oz tomato sauce
½ tsp garlic minced
¼ tsp cinnamon
1 cup mozzarella cheese grated
In a large skillet, brown the ground beef. Drain.
In a 8x8x2” glass dish, spread the corn over the bottom.
Combine eggs and cottage cheese, spread over the corn.
Stir flour into the beef. Cook for 1 minute.
Stir in tomato sauce, garlic, cinnamon.
Layer the meat on the cheese layer.
Top with grated mozzarella.
Bake uncovered 350 degrees for 30 min.
